Awesome chicken pie

This pie is so good that sharing it actually hurts.

Ingredients:

1 kg of chopped and cooked chicken
1 onion, 2 garlic (chopped & crushed)
150-200 ml of GOOD white wine
350 creme fraiche
I chicken stock cube
tarragon leaves
filo pastry
flour, salt, pepper, butter, oil

How to:
Cook the chicken until white.
In a different pan, melt the butter and add the onion and the garlic until soft.
Pour the wine and add the chicken stock
Once dissolved, add the chicken

In the meantime, in a die dish, lay one filo pastry at the bottom.
Add the chicken mixture, add the creme fraiche,  sprinkle some flour, salt, pepper, tarragon leaves and crush with you hands about 3 filo sheets and sprinkle them on top too.

Place in the preheated oven and cook until the meat is soft and the filo golden.

Spinach linguine with feta

Really easy.



Ingredients:
Linguine, spinach, feta (or any other cheese of your liking)

How to:
Boil the linguine with spinach, until it becomes, well, green!
Serve with a lot of grated cheese and pepper

Jam filled cupcakes

Way easier than you think.
Desserts have never been my strong spot so I am trying to start with the easiest recipes- cupcakes being one of them. You can either use a cupcake tray or silicone cupcake liners. I use the latter- since they are so much easier to wash and store.
I know, I could have a better photo, but i'm only human, trying to make cupcakes.



Ingredients:
For the cupcakes:
1 cup (2 sticks) unsalted butter
1 1/2cups all-purpose flour, 1 1/2 teaspoons baking powder, pinch of salt
3/4 cup granulated sugar
2 eggs, 1 1/2 teaspoons pure vanilla extract, 1/2 cup plus 2 tablespoons whole milk

For the frosting:
1 cup confectioners' sugar
1/4 cup unsweetened cocoa powder
1/4 cup of your favorite jam

How to: 
Cupcakes:
  1. Beat the  flour, baking powder, and salt.Add the sugar and 1/2 cup butter and beat in eggs, one at a time. Add the vanilla and with mixer on low, beat in flour and milk.
  2. Pour the batter in the cupcake liners. Bake until a toothpick inserted in center of a cupcake comes out clean. Let it cool before you add the frosting. 
  3. Using a paring knife, cut a  piece from the top of each cupcake,fill each hole with your favourite jam and replace cutout pieces.
Frosting:
  1. Whisk together the sugar, cocoa, and a pinch of salt. With then electric mixer beat half a cup of butter until light and fluffy. Gradually add cocoa mixture,  2 tablespoons milk and 1/2 teaspoon vanilla. Beat until light and fluffy and you 're ready to frost.
For extra flavor and decoration you can top the cupcakes with the same fruit as the jam.

Quick, easy and perfect if you want to become popular at work.
One easy hour in the kitchen will have people talking about you all morning the next day.

Chickpeas with leeks and sausages

When it's cold and rainy and cold and you hate everyone and it's cold, this is the perfect dish to make it all a little better.
Soak the chickpeas in water the night before and change the water  they're in in the morning, soak them for a few hours more and you'll thank me when instead of 4 hours it will take you one to cook this meal.
When it's ready, open a bottle of rose or a light red wine.

Ingredients:
500 gr chickpeas, 6-8 leeks, finely chopped, 2 large sausages (any flavour you like), 2 tb of paprika, 
80 ml of olive oil,  1/2 cup of lemon zest, salt and freshly ground pepper 

How to:
1. Place the chickpeas and the leek in a pan, and add water to exceed them about 5 cm and boil
2. Lower the fire and boil for another 30 mins, covered
3. Add the sausages, cut in small pieces
4. Cook for another hour, until the chickpeas are soft
5. Add the paprika, salt & pepper and cook for another 10 mins
6. Add about 2 soup spoons of the chickpeas, the olive oil and the lemon to the multi and then pour pack to the pan
7. Cook for another 10 mins, turn the fire off and let it food settle before serving.


Even if it's cold, and rainy and shitty out there, never forget. You're still alive.

Blackeyed peas/ beans

A very nice, simple, healthy, nutritious meal/ salad/ snack.
The secret for this receipe is to boil the peas twice.Once to get rid of the black smoke (haha) and then to actually get to the point where you can actually eat them.
Serve them with some extra virgin olive oil,  finely chopped onions, and some parsley.

Ingredients:
Black eye beans, onions, parsley
How to:
1. Boil the beans
2. Get rid of the boiled water
3. Boil the beans again
3. Serve with a freshly chopped onion and parsley

This is a very work friendly meal as well.
As you long as you have faith.
 

Beetroot salad with apple

For those who like some colour in their plate.
Cut the beetroot (canned or cooked) into small little pieces, do the same with an apple (red or green), grate an onion, pour the fresh cream, some fresh pepper and yes, it was that easy.


Great for summer, next to a nice sweet and dry wine.
Or beer of course.
